Cris uses a rather linear setup for his wheel (Steering Linearity slider 1/4 from the left). Also the steering ratio in the setup screen is rather high. You might want to change the steering ratio if you think the car responds too nervously.
Or... you might want to get used to it, like I did. With some practice, you'll see it's a great way to drive the car.
